Wine Me More: Tannin

Wine Me More - Il Tannino

Wine Me More, the Tenute Navarra column dedicated to curiosities and in-depth insights into the world of wine, today reveals one of the most decisive components in a good glass of red: tannin.

Tannin is a natural substance found in the bark of certain trees, such as chestnut and oak, as well as in fruits and plant-based foods.

It belongs to the polyphenol family, antioxidant substances that help counteract cellular aging and protect the ecosystem of trees and forests. The extract is, in fact, used in various ways and fields, from the vegetable tanning process of leather to cosmetic preparations and as a dietary supplement.

The tannin extraction process allows the wood, transformed into chips and immersed in hot water, to release a deep red liquid with an intense aroma. This solution is dried to obtain tannin powder, which is useful in clarification processes, color stabilization, and the reduction of sulfites in red wine production.

A entirely “zero impact” process, in which the water and steam used for transformation are purified and reused in subsequent production cycles. Thermal energy is employed in following production stages, and even the exhausted wood is converted into pellets for stoves.

Furthermore, tannin is naturally present in the grape seeds and skins of black grapes. In fact, red wine is generally obtained by macerating the must together with the skins, pomace, and seeds, which slowly release tannin during vinification.

The concentration of tannin present in certain grape varieties and in the wood of the barrels, as well as the aging time and the addition of tannin extract, is therefore decisive for the final taste and longevity of the wine.

In the red wines of Tenute Navarra, one can certainly appreciate the presence of tannin, in different quantities and flavors depending on the type of wine.

Disiato, Frappato IGP Terre Siciliane, is a fairly tannic wine, with a distinct sensation of dryness and roughness on the palate, characteristic of young reds.

Maribu, Cerasuolo di Vittoria DOCG, is also quite tannic, with a moderate sensation of astringency provided by the Frappato, but well-smoothed by the blend with Nero d’Avola.

Finally, Battichié, Nero d’Avola Sicilia DOC Riserva del Fondatore, is a velvety wine in which the perception of tannin is harmonious and well-balanced, with a sensation of softness and roundness on the palate.
